The symbol warning appears to be from libdap, which is only used by GrADS for accessing station data remotely via GDS. If you are not using that feature, I wouldn’t worry about it. Now that you’ve got netcdf4, what exactly doesn’t work?
By the way, version 2.0.1 is now about 5 years old. So is the version of the grib2 library your apt-get build is linked with. There is a LOT your build cannot do. If you are running on a unix box, why you don’t just stick the pre-compiled binaries from COLA somewhere under your home directory and take advantage of 5 years worth of improvements to the software?

Your ubuntu build is probably not linked with netcdf4, and it probably also has udunits2 — the user-friendly ‘yum’ install feature on ubuntu does not install a user-friendly version of GrADS. Better to download a build from http://cola.gmu.edu/grads/downloads.php and install it yourself.
