[gradsusr] How to plot vertical wind speed with temperature from observational data

Hi,

I am new to grads and want to plot a figure with vertical wind speed profiles overlapped with temperature contour for a station. Here y-axis is height and x-axis is time. 
I can do it from wrf simulations, but how should I use a text file to read this data and plot them. 

I will appreciate any help or directions to do it.
