You can usually pull this directly out of the model data you're using. Do an
inventory of the data you're using and look for something like:

LFTX
4LFTX
or
LFTXl100_100

The keyword is usually LFTX or some variation of that. 

If its not provided by the model, then you'll have to calculate the parcel
temperature @ 500mb, and then its simple subtraction with the environmental
temperature. But calculating the parcel trace is difficult, and I don't have
a good working example in GrADS for that.
