Antonio,

The vertical component, w, should be easy to plot -- just "d w", or "d
100*w" to get values that aren't so small.  For horizontal winds, if you
only want u or v, they can be plotted in the same way, but if you want
the components relative to your cross section, you will have to do the
trig to get the right values for along and perpendicular components.
Figure out the angle your cross section makes, and let grads do the
trig.  If you just want the wind vectors, just "d u;v" or "d
skip(u,5,5);v" if you have a dense grid.
